The grapes are put into vats by gravity flow Fermentation: in temperature-controlled inox vats for 25-30 days depending on the vintage Extraction par pneumatic pigeage (punching down the cap) Malolactic fermentation and ageing: in new oak barrels (up to 70%) on the lees Fining and filtering as necessary, depending on the vintage Duration of barrel ageing: 10-13 months Tasting notes: Tasting notes: This wine was aged 12 months in French oak barrels. The color is dark red, opaque. Flavor is layered, ripe black fruit and vanilla leather. Rubin vintage 2007 totally opens the hidden power of this variety. The body is very well structured, with smooth tannins and excellent development promise of wine in the bottle at least 10 years
