The grapes are put into vats by gravity flow Fermentation: in temperature-controlled inox vats for 25-30 days depending on the vintage Extraction par pneumatic pigeage (punching down the cap) Malolactic fermentation and ageing: in new oak barrels (up to 70%) on the lees Fining and filtering as necessary, depending on the vintage Duration of barrel ageing: 10-13 months Tasting notes : The expression of this local Bulgarian variety on the terroir of the Sakar Mountain is really explosive; Spice notes abound on the nose, along with concentrated, dried raspberries, violets and dark plums. A first sip reinforces the bouquet, and adds layers of blueberry, pomegranate and more spice, along with a hint of earthiness and smoke. Beautiful soft tannins envelope the palate and a hint of very pleasing on the finish:
